Ingredients

  • 1/4 cup Badia Olive Oil Extra Virgin
  • 2 tbsps Badia Lemon Juice
  • 1 tsp Chopped Lemon Zest
  • 1 Garlic Clove, smashed
  • 1/4 tsp Badia Fennel Seed
  • 1/2 tsp Badia Salt
  • 1/4 tsp Badia Ground Pepper
  • 1 tbsp Parsley, chopped
  • 1/2 lb. Semi-firm Cheese (Asiago, Edam, Fontina) cut into 1/2 by /2 by 1-inch pieces
  • 1/2 cup Whole Black Olives, rinsed and drained
  • 1/2 cup Whole Manzanilla Olives

Directions

  1. In a bowl, combine Olive Oil, Lemon Juice, Lemon Zest, Garlic, Fennel Seed, Salt, Pepper and Parsley
  2. Mix well
  3. Add the cheese and olives
  4. Toss to coat
  5. Allow to marinate, refrigerated and covered overnight
