Ingredients
- 1/4 cup Badia Olive Oil Extra Virgin
- 2 tbsps Badia Lemon Juice
- 1 tsp Chopped Lemon Zest
- 1 Garlic Clove, smashed
- 1/4 tsp Badia Fennel Seed
- 1/2 tsp Badia Salt
- 1/4 tsp Badia Ground Pepper
- 1 tbsp Parsley, chopped
- 1/2 lb. Semi-firm Cheese (Asiago, Edam, Fontina) cut into 1/2 by /2 by 1-inch pieces
- 1/2 cup Whole Black Olives, rinsed and drained
- 1/2 cup Whole Manzanilla Olives
Directions
- In a bowl, combine Olive Oil, Lemon Juice, Lemon Zest, Garlic, Fennel Seed, Salt, Pepper and Parsley
- Mix well
- Add the cheese and olives
- Toss to coat
- Allow to marinate, refrigerated and covered overnight
