Ingredients
- 1 lb Beef
- 1 1/12 Pork Loin
- 2 ½ lb Chicken Parts
- 1 lb Italian Sausage
- ½ lb Chorizo
- ¼ Bacon, in one piece
- 4 Bay Leaves
- 2 qt Water
- Badia Adobo to taste
- 4 cups Jasmine Rice
- 4 Turnips, peeled and chopped
- 3 Carrots, peeled and chopped
- 1 lb New Potatoes, quartered
- 1 sm Cabbage, cut into wedges
- 2 Small Onions, sliced
- ¼ chopped Parsley
Directions
This meal-in-a-pot forms the classic family feast loved by all, rich or poor, in every region. It is made in three parts; first the meat and sausages, followed by the vegetables, then the rice made with the broth from the meat. Set the plates with rice in the center and a variety of meats and vegetables around it, all that’s left to do is enjoy it.
- In a large pot, add the beef, pork chicken, sausage, chorizo, bacon, bay leaves and water
- Season it with Badia Adobo
- Bring the liquid up to a boil and reduce to a simmer
- Cook meat for about 1 ½ hours or until the meat is tender
- Remove the meat from the pot and set aside
- Remove 4 cups of the broth and use it to replace the water to cook rice according to instructions
- Add the turnips, carrots and, potatoes to the same water
- Bring the liquid back to a boil and reduce to a simmer
- Cook for 20 minutes
- Add the cabbage and continue to cook for 30 minutes
- Slice the beef, pork loin, sausage and chorizo, ½ inch thick
- Dice the bacon
- In a hot saute pan, render the bacon until crispy
- About 5 minutes before the cabbage is done, return the beef, pork, chicken and sausages to the pot and add the onions
- When ready to serve, remove meat and vegetables straight from the pot to the plate
- Serve the rice in the center of the plate
- Garnish with crispy bacon
- Place one of each meat and vegetables all around the plate
- Garnish the potatoes with the cooked onions and the parsley.
