Savory Herb Breakfast Muffins

  • 1 loaf country-style French bread, cut into 1-inch cubes and toasted (about 8 cups)
  • 10 oz turkey sausage
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 1/2 onion, finely chopped
  • 2 tsp Badia Poultry Seasoning
  • 1 cup chicken broth
  • 3 large eggs

  1. Preheat the Oven
    Preheat oven to 350°F and grease a mini muffin tin.
  2. Cook the Sausage
    In a skillet over medium heat, cook turkey sausage until fully browned. Remove and set aside.
  3. Sauté the Vegetables
    In the same pan, add carrots, celery, and onion. Cook for about 5 minutes until softened.
  4. Combine Ingredients
    In a large bowl, combine toasted bread cubes, cooked sausage, sautéed vegetables, Badia Poultry Seasoning, broth, and eggs. Mix until well combined.
  5. Assemble the Muffins
    Spoon the mixture into the prepared mini muffin tin, pressing gently to hold shape.
  6. Bake
    Bake for 15 minutes, or until golden brown and set.
  7. Serve
    Let cool slightly, then remove from tin and serve warm.
