Savory Herb Breakfast Muffins

- 1 loaf country-style French bread, cut into 1-inch cubes and toasted (about 8 cups)
- 10 oz turkey sausage
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 1/2 onion, finely chopped
- 2 tsp Badia Poultry Seasoning
- 1 cup chicken broth
- 3 large eggs
- Preheat the Oven
Preheat oven to 350°F and grease a mini muffin tin. - Cook the Sausage
In a skillet over medium heat, cook turkey sausage until fully browned. Remove and set aside. - Sauté the Vegetables
In the same pan, add carrots, celery, and onion. Cook for about 5 minutes until softened. - Combine Ingredients
In a large bowl, combine toasted bread cubes, cooked sausage, sautéed vegetables, Badia Poultry Seasoning, broth, and eggs. Mix until well combined. - Assemble the Muffins
Spoon the mixture into the prepared mini muffin tin, pressing gently to hold shape. - Bake
Bake for 15 minutes, or until golden brown and set. - Serve
Let cool slightly, then remove from tin and serve warm.
