There is no question that the Pasilla Chili is the most popular amongst the wide variety of chilies used to prepare Mexican dishes. It is called “pasilla” due to its appearance after going through the process of dehydration, similar to that used to produce raisins. This mildly hot chili is easy to use in all types of salsas, enchiladas and the famous “chili con carne”.
