Ingredients

Zucchini Zoodles with a Twist

  • 1 tbsp Badia Extra Virgin Olive Oil
  • 2 tsp Badia Minced Garlic in Olive Oil
  • 2 medium Zucchinis
  • 2 tbsp Parmesan Cheese, grated.
  • 1 tsp Badia Adobo with Pepper for taste
  • Spiralizer or Julienne Peeler

Garlic & Parsley Fried Plantains

  • 2 ripe Plantains
  • 2-3 tbsp Canola Oil for frying
  • 1 tbsp Badia Garlic & Parsley

Directions

Zucchini Zoodles with a Twist

  1. Slice the ends off the Zucchini and place it on your spiralizer.
  2. Turn the spiralizer and create zucchini noodles.
  3. Heat the Badia Extra Virgin Olive Oil in a large pan on medium heat.
  4. Add the Badia Minced Garlic in Olive Oil and sauté for 30 seconds.
  5. Next add the Zucchini Noodles and toss them for one minute. Just to warm through, then turn off the heat.
  6. Sprinkle on the Grated Parmesan along with the Badia Adobo with Pepper and give them another toss in the pan.
  7. Serve

Garlic & Parsley Fried Plantains

  1. Peel Plantains by cutting off both ends and cut a slit down the side of each Plantain.
  2. Remove the Plantain peels, then cut the plantains into 1/4 inch-thick slices. Tip: Cutting them diagonally will provide a larger surface for caramelization.
  3. Drizzle enough Oil into a nonstick pan to coat the bottom of the pan and place it in medium heat.
  4. Once the Oil begins to sizzle , but not smoke, add the Plantains and fry for 1 1/2 minutes on one side flip and cook for 1 minute on the other.
  5. Remove the Plantains from the pan and make sure you drain them on paper towels.
  6. Sprinkle lightly with Badia Garlic & Parsley.
  7. Enjoy!
