Meatloaf
- 1 tbsp Badia Extra Virgin Olive Oil
- 2 tbsp Badia Minced Onion
- 3 tbsp Badia Minced Garlic, Lemon & Basil
- 2 tbsp Badia Italian Seasoning Mediterranean Blend
- 1 tbsp Red Pasta Sauce
- 1 tsp Badia Beef Flavor Bouillon
- 1 Egg
- 1 lb. Lean Ground Beef
- 5 tbsp Badia Breadcrumbs with Complete Seasoning®
Topping: Instant Potatoes with Spinach
- 1 bag Badia Instant Potatoes with Spinach
- Badia Pine Nuts, minced
- Lemon Zest
Meatloaf
- Preheat oven to 350ºF.
- Spray a muffin tin with oil.
- In a large bowl add all ingredients and mix with the hands until everything is uniform.
- Use the hands to form a ball and press into the muffin tin. The surface should be slightly rounded on top.
- Bake for about 30 minutes until browned on top. Remove from oven.
Topping: Instant Potatoes with Spinach
- Heat 2 cups of water to a boil.
- Remove from heat and add entire contents of the Badia Instant Potatoes with Spinach bag.
- Stir until desired consistency.
Assemble
- Top each meatball with Badia Instant Potatoes with Spinach with a piping bag or with a spatula.
- Garnish with Badia Pine Nuts and Lemon zest.
