Coconut Grouper

  • 2 lbs. fresh Grouper
  • 4 oz. Badia Olive Oil
  • 1 white onion (sliced)
  • 1 green pepper (strips)
  • 2 “ribs” of celery (diced)
  • 1 bunch of fresh Cilantro (chopped)
  • 3 tbs. Badia Minced Garlic
  • 2 oz. tomato paste
  • 4 tbs. fresh lime juice
  • 16 oz. Badia fresh Coconut Milk
  • 1 oz. all purpose flour
  • ½ cup Badia Coconut Water (optional)
  • Badia Salt & Pepper to taste

  • Season fish with salt, pepper, lemon juice and set aside
  • In a sauce pan, heat oil, sauté onion, pepper, celery and garlic
  • Add the tomato paste and cilantro
  • Sprinkle with the flour slowly and mixing well while cooking for 4 more minutes
  • Add the fish and coconut milk
  • Cook for about 15 minutes allowing the sauce to thicken
  • If it becomes too thick, you may add coconut water or just regular water will do if you prefer not to have a strong coconut flavor
  • Great when served with white rice and a side of steamed vegetables
