Coconut rice with raisins (English Recipe)

  • 1/4 tsp Badia Ground Ginger
  • 1 tbsp Butter
  • 1/2 Large Yellow Onion, finely chopped
  • 1 ½ cups Long Grain Rice
  • 1 Badia Cinnamon Sticks
  • 1 can Badia Coconut Milk
  • 8 oz Raisins
  • 1 tsp Badia Sea Salt
  • 1 tbsp Brown Sugar

Optional: Fresh Coconut, shelled but unpeeled, shaved, for garnish {Fresh shelled coconut, but unpeeled, shaved for garnish.}

  1. Rinse rice in a sieve under cold water, then drain well
  2. In a medium saucepan with a tight-fitting lid, melt butter over medium-low heat
  3. Add onion and cook, stirring frequently, until translucent, about 5 minutes
  4. Add rice, and stir until grains are well coated with butter, about 1 minute
  5. Add cinnamon stick, ginger, coconut milk, 1 3/4 cups water, salt, raisins and sugar
  6. Stir well to combine
  7. Bring to a boil, and immediately reduce heat to lowest setting
  8. Cook, covered, for 25 minutes
  9. Remove from heat, and let stand for 5 minutes
  10. Fluff with a fork
