Ingredients

  • 1 lb Beef
  • 1 1/12 Pork Loin
  • 2 ½ lb Chicken Parts
  • 1 lb Italian Sausage
  • ½ lb Chorizo
  • ¼ Bacon, in one piece
  • 4 Bay Leaves
  • 2 qt Water
  • Badia Adobo to taste
  • 4 cups Jasmine Rice
  • 4 Turnips, peeled and chopped
  • 3 Carrots, peeled and chopped
  • 1 lb New Potatoes, quartered
  • 1 sm Cabbage, cut into wedges
  • 2 Small Onions, sliced
  • ¼ chopped Parsley

Directions

This meal-in-a-pot forms the classic family feast loved by all, rich or poor, in every region. It is made in three parts; first the meat and sausages, followed by the vegetables, then the rice made with the broth from the meat. Set the plates with rice in the center and a variety of meats and vegetables around it, all that’s left to do is enjoy it.

  1. In a large pot, add the beef, pork chicken, sausage, chorizo, bacon, bay leaves and water
  2. Season it with Badia Adobo
  3. Bring the liquid up to a boil and reduce to a simmer
  4. Cook meat for about 1 ½ hours or until the meat is tender
  5. Remove the meat from the pot and set aside
  6. Remove 4 cups of the broth and use it to replace the water to cook rice according to instructions
  7. Add the turnips, carrots and, potatoes to the same water
  8. Bring the liquid back to a boil and reduce to a simmer
  9. Cook for 20 minutes
  10. Add the cabbage and continue to cook for 30 minutes
  11. Slice the beef, pork loin, sausage and chorizo, ½ inch thick
  12. Dice the bacon
  13. In a hot saute pan, render the bacon until crispy
  14. About 5 minutes before the cabbage is done, return the beef, pork, chicken and sausages to the pot and add the onions
  15. When ready to serve, remove meat and vegetables straight from the pot to the plate
  16. Serve the rice in the center of the plate
  17. Garnish with crispy bacon
  18. Place one of each meat and vegetables all around the plate
  19. Garnish the potatoes with the cooked onions and the parsley.
