Coconut Grouper

- 2 lbs. fresh Grouper
- 4 oz. Badia Olive Oil
- 1 white onion (sliced)
- 1 green pepper (strips)
- 2 “ribs” of celery (diced)
- 1 bunch of fresh Cilantro (chopped)
- 3 tbs. Badia Minced Garlic
- 2 oz. tomato paste
- 4 tbs. fresh lime juice
- 16 oz. Badia fresh Coconut Milk
- 1 oz. all purpose flour
- ½ cup Badia Coconut Water (optional)
- Badia Salt & Pepper to taste
- Season fish with salt, pepper, lemon juice and set aside
- In a sauce pan, heat oil, sauté onion, pepper, celery and garlic
- Add the tomato paste and cilantro
- Sprinkle with the flour slowly and mixing well while cooking for 4 more minutes
- Add the fish and coconut milk
- Cook for about 15 minutes allowing the sauce to thicken
- If it becomes too thick, you may add coconut water or just regular water will do if you prefer not to have a strong coconut flavor
- Great when served with white rice and a side of steamed vegetables
